Step by step
Ingredients:
1 clove minced garlic
1/4 chopped sweet onion
1 c purple cabbage cut into strips
1 c chopped kale
1/2 avocado
1/4 c precooked white quinoa
small handful raw cashews
1 tbsp raw sunflower seeds
1 tbsp raw hemp seeds
1/4 c thinly grated carrots
1 tbsp coconut aminos
2 tbsp avocado oil
1 tsp ground ginger
sea salt to taste
Method:
Set skillet to medium heat and drizzle with avocado oil.
Add garlic and onion and sauté until tender.
Add purple cabbage and kale and toss until tender.
Sprinkle with raw cashews, ginger powder, pinch of sea salt , and coconut aminos— toss until all veggies are tender and cashews are golden, then place in serving bowl.
Top with white quinoa, grated carrots, half avocado, hemp seeds, and sunflower seeds.
Sprinkle with sea salt and enjoy!
