Olive Oil Shortbread Cookies Made with Floral Tea
Truly a taste of spring
Over the weekend, I had a hunch to bake and this was my first go. Already having all of these ingredients stocked, this recipe was surprisingly perfect. Enjoy with a hot cup of tea for the perfect afternoon snack!

Step by step
Ingredients:
3 c all - purpose flour
1 c powdered sugar
1 tbsp floral tea (earl grey or black tea leaves)
sprinkle of sea salt
1 c olive oil
2 tbsp water
Method:
Preheat oven to 350F and line baking sheet with parchment paper
In large mixing bowl, add all dry ingredients and stir to combine
Slowly stir in olive oil and water until soft dough forms
Remove dough from bowl to parchment paper and split into two sections
Roll into two logs, wrap in wax paper, and freeze for 1 hour
Once chilled, cut into 1/2 inch thick discs and bake for 16-18 minutes
Watch the cookies and once the tops are slightly brown, they are done
Allow cookies to cool on cookie rack and then enjoy with a cup of hot tea
Store dough in freezer or bake cookies and store in glass container for up to 10 days
