Olive Oil Dark Chocolate Chip Cookies
Rich with a pinch of salt
These olive oil, dark chocolate chip cookies are not only simple but delicious. Rich with the taste of olive oil and dark chocolate these were a crowd favorite at my house over the weekend! Enjoy them while they’re hot, you won’t regret it!

The step by step
Ingredients:
2 c white four or your favorite gluten free flour for a gluten free option
1 tsp baking powder
1/2 tsp baking soda
pinch of sea salt
1/2 c coconut sugar
1/2 c olive oil
1/3 c water
1 c dark chocolate (my favorite vegan option is Lily’s 70%)
1 tbsp flaky sea salt (optional)
Method:
Preheat the oven to 350F and line baking sheet with parchment paper
In smaller bowl, add all dry ingredients and whisk
In larger mixing bowl, whisk sugar, water, and olive oil until smooth liquid (2 minutes of whisking)
Slowly add dry ingredients to wet ingredients making sure not to over mix (if too dry add additional tbsp water)
Add dark chocolate pieces and remove 1 tbsp of dough at a time onto pan
Once pan is filled, place in freezer for 30 minutes then pull out and bake for 12-13 minutes
Sprinkle cookies with flaky sea salt and allow them to cool on parchment paper separate from hot pan
