Olive Oil Dark Chocolate Chip Cookies

Vegan Friendly and Refined Sugar Free

Rich with a pinch of salt

These olive oil, dark chocolate chip cookies are not only simple but delicious. Rich with the taste of olive oil and dark chocolate these were a crowd favorite at my house over the weekend! Enjoy them while they’re hot, you won’t regret it!

The step by step

Ingredients:

  • 2 c white four or your favorite gluten free flour for a gluten free option

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • pinch of sea salt

  • 1/2 c coconut sugar

  • 1/2 c olive oil

  • 1/3 c water

  • 1 c dark chocolate (my favorite vegan option is Lily’s 70%)

  • 1 tbsp flaky sea salt (optional)

Method:

  • Preheat the oven to 350F and line baking sheet with parchment paper

  • In smaller bowl, add all dry ingredients and whisk

  • In larger mixing bowl, whisk sugar, water, and olive oil until smooth liquid (2 minutes of whisking)

  • Slowly add dry ingredients to wet ingredients making sure not to over mix (if too dry add additional tbsp water)

  • Add dark chocolate pieces and remove 1 tbsp of dough at a time onto pan

  • Once pan is filled, place in freezer for 30 minutes then pull out and bake for 12-13 minutes

  • Sprinkle cookies with flaky sea salt and allow them to cool on parchment paper separate from hot pan

  • Enjoy!
