Collagen Coconut Overnight Oats
Chilled oats for the warmer days
After finishing up a long distance run in the warm morning sun, one of my favorite ways to start my day during my follicular phase of my monthly cycle is with my superfood overnight berry oats. Made with my favorite plant based collagen protein powder, full fat coconut milk, and organic rolled oats, this meal is not only perfect for building lean muscle mass but filling me with rich dietary fiber, essential amino acids, and phytonutrients. Step by step
Kitchen gadgets:
8 oz mason jar with lid
Ingredients:
1/3 c coconut milk
1/2 c organic rolled oats
1 tbsp chia seeds
1/4 c frozen red raspberries
1 scoop collagen protein powder (I use plant based but grass-fed is fine too if that is your preference)
1 tbsp raw almond butter (optional)
1/2 tsp honey too sweeten as needed
Method:
Pour coconut milk in 8 oz mason jar and stir in collagen protein powder
Add oats, seeds, and raspberries then screw lid on tight and place in refrigerator
In the morning take out the oats and splash 1 tbsp water to loosen the oats and top with almond butter and honey
