Oatmeal Peanut Butter Chocolate Chip Cookies

Ingredients:
1 c oats
1/3 c coconut flour
1 tbsp ground flax
1 tbsp cacao powder
1/4 tsp sea salt
1 tsp baking powder
4 tbsp melted coconut oil
2 tbsp nut milk
1/4 c coconut sugar
1/2 tsp vanilla
2 heaping tbsp peanut butter
1/4 c dark chocolate chips
Method:
Preheat oven 325 F and place parchment paper on cookie sheet
In large mixing bowl, add all dry ingredients (oats, flour, flax, cacao powder, salt, and baking powder) and stir together
Then add all wet ingredients (coconut oil, nut milk, coconut sugar, vanilla, and peanut butter) and mix well
Slowly stir in dark chocolate chips
Dough should be moist and sticky, may add additional nut milk if needed
Take 1 tbsp of dough and roll into ball and place on cookie sheet
Take the back of a glass mason jar and flatten the dough
Bake for 6 minutes. Allow the cookies to cool on the sheet undisturbed for 5 minutes then enjoy!
