1 Pan Meal: Spicy Buffalo Cauliflower With Assorted Veggies
One pan meals are the BEST
If you are anything like me, you know your time is limited on certain days of the week. Having a meal that feeds multiple with little mess is a saving grace. With animal protein sprinkled into my diet and not a staple, I want to encourage you to try my spicy buffalo cauliflower in replace of chicken. Serve with a raw green salad and some black beans and just like that, you are ready for dinner!

Step by step
Kitchen gadgets:

Ingredients:
1 head of cauliflower rinsed and chopped into medium sized chunks
1 package of broccolini rinsed
1 sweet potato washed and chopped into cubes
3 tbsp avocado oil
3 tbsp Primal Medium Buffalo sauce
1/2 tbsp cumin
2 tsp paprika
1 tsp Trader Joes Chili Lime Seasoning
1 tsp cinnamon
1/2 lemon
Method:
Preheat oven 375 F and line large baking sheet with parchment paper
Add broccolini and sweet potato to sheet pan and drizzle with avocado oil and sprinkle with sea salt and black pepper
Add cinnamon and 1 tsp paprika to sweet potato
Squeeze lemon on broccolini
in large mixing bowl, throw cauliflower chunks and drizzle with avocado oil, buffalo sauce, and lemon juice
Add remaining seasonings to cauliflower and mix well with spoon making sure all pieces of cauliflower are seasoned
Add cauliflower to pan with other veggies
Oven roast for 20 mins and serve with a raw spinach salad and pressure cooked black beans on the side!
