Chocolate Pecan Energy Balls

Whether you are reaching for an on-the-go snack to satisfy your sweet tooth craving or needing a 3 o’clock pick me up at the office, my chocolate pecan balls are the answer. I specifically used cacao and pecans not just for a satisfying taste but to speciffllay increase our brain cognitive function and overall health. This sweet treat is smart, simple, and satisfying. I can’t wait for you to try it and share it with your friends at the office!

Step by step

Kitchen gadgets:

  1. Food processor or High speed blender

  2. Rubber spatula

  3. Parchment paper

  4. Glass container

Ingredients:

  • 1 cup pitted dates

  • 1/2 cup raw pecans

  • 4 tablespoons ground flax seed

  • 3 tablespoons cacao powder

  • 1/2 tablespoon cinnamon powder

  • 1 tablespoon coconut oil

  • 3 tablespoons of water

  • Sea salt crystals (optional)

Method:

  • Add pitted dates to food processor and blend until ball forms

  • Add remaining ingredients and blend again until ball forms (if too dry add additional water, if too moist add additional flax seed)

  • Transfer ball to wax paper and take one tablespoon of mixture at a time and roll into balls should make about 6

  • Sprinkle balls with sea salt crystals

  • Line glass dish with wax paper and place balls inside

  • Enjoy right away or freeze for 20 mins

  • Store in the refrigerator and enjoy for up to 7 days
