Chocolate Peanut Butter Granola

Gluten Free and Vegan Friendly

I’m on a chocolate kick

Things are getting exciting around my house with all of these new chocolate recipes. For all of my dark chocolate lovers, this granola is for you. Not too sweet and perfectly served over oat milk with a heaping tablespoon of peanut butter and raspberries!

Step by step

Kitchen gadgets:

  • wooden spoon

  • stainless steel large mixing bowl

  • half sheet pan

  • parchment paper

Ingredients:

  • 4 c rolled oats

  • 1/2 c pumpkin seeds

  • 1/2 c chia seeds

  • 2 tbsp cacao powder

  • 1 tsp cinnamon

  • Pinch sea salt 

  • 1/2 c melted coconut oil

  • 1/4 c coconut sugar 

  • 1-2 tbsp peanut butter

  • 1/4 c dark chocolate pieces

Method:

  • Preheat oven to 350F and line half baking sheet with parchment paper

  • In large mixing bowl, add oats, seeds, cacao powder, and cinnamon

  • Stir with wooden spoon

  • Add melted coconut oil, sugar, and peanut butter

  • Stir with wooden spoon making sure all pieces of granola are moist with oil and peanut butter

  • Place oat mix on baking sheet and press down with wooden spoon

  • Bake for 12 minutes then stir and press and bake again for another 10 minutes

  • Allow to cool undisturbed for 2 hours then add dark chocolate pieces and store in large mason jar for up to 2 weeks
