Veggie Fajitas

Did you know, one serving of cauliflower consist of only 25 calories and contains around 2 grams of fiber and 2 grams protein? Cauliflower is a versatile cruciferous vegetable that can be prepared in a number of ways while giving your body essential vitamins and rich fiber. One of my favorite ways to prepare cauliflower at home is in my zesty fajitas. This recipe is a party favorite and one everyone will be asking for more! I recommend serving with Siete cassava flour tortillas and top with Whole Foods guac.

Step by step

Kitchen gadgets:

  • Iron skillet

  • Stainless steel skillet

  • Wooden spoon

Ingredients:

  • 4 tablespoons avocado oil

  • 1 clove minced garlic

  • 1/2 cup chopped sweet onion

  • 1 cup colorful bell peppers cut into thin strips

  • 1 cup purple cabbage chopped into long thin strips

  • 2 cups cauliflower cut into thick chunks

  • 2 tablespoons lime juice or 1/2 lime

  • 2 tablespoon Trader Joes Chili Lime Seasoning

  • 1 tablespoon cumin

  • 1/2 tablespoon paprika

  • small handful of fresh cilantro (optional)

Method:

  • Add 1 tablespoon of avocado oil to iron skillet on medium heat

  • Toss garlic and onion until slightly brown

  • Add peppers and cabbage and toss until soft

  • In separate stainless steel skillet, add 1-2 tablespoons of avocado oil and toss cauliflower

  • Add all seasoning to cauliflower and toss until crispy

  • Add cauliflower to pepper and onion mix and drizzle lime juice on top

  • Reduce hit to low and cover for 5-8 minutes

  • Enjoy on a taco or in a bowl for taco salad

  • Store leftovers in glass container for up to 3 days
