Paleo Chocolate Chunk Pumpkin Bread

You will not believe this bread is not only gluten free and refined oil free but is also refined sugar free. it is that good! Bake on a slow Saturday when you have time to enjoy it with your favorite cup of coffee.


Ingredients:

  • 3 1/2 c organic all-purpose gluten free flour

  • 1/2 c pure maple syrup

  • 1/2 c coconut sugar

  • 1 c olive oil

  • 4 large eggs

  • 1 can pumpkin puree

  • Sprinkle of sea salt

  • 2 tsp baking soda

  • 2 tsp baking powder

  • 1 tsp nutmeg

  • 1 tbsp cinnamon

  • 1/2 tsp clove

  • 2/3 c water

  • Lily’s 72 % dark chocolate chips (I found 72% dark chocolate chips DF and GF at trader joes as well)

Method:

  • preheat oven to 350 and line two loaf pans with parchment paper

  • Whisk together sugar, maple sugar, oil, in a large bowl then add eggs and pumpkin puree until combined

  • Combine all dry ingredients in a separate glass bowl and whisk

  • Add half of the dry ingredients to the wet then add half the water then add remaining dry and mix then add remaining water

  • Add mix to both pans evenly then top with dark chocolate chips

  • Serve with chia tea, tbsp almond butter, and enjoy
