Rosemary Rainbow Roasted Carrots and Potatoes

The perfect Easter side dish

Oven roasted rosemary carrot, green bean, and potato medley makes for the perfect Easter Sunday side dish as you and your family gather together around the kitchen table for a late afternoon lunch!

The step by step

Ingredients:

  • 1 lb of rainbow carrots

  • 1/2 lb fresh green beans

  • 1 c halved rainbow potatoes

  • 3 cloves minced garlic

  • 1/2 sweet onion chopped

  • 3 tbsp olive oil

  • 1 tbsp dried rosemary

Method:

  • Preheat oven to 375 F and line large baking sheet with parchment paper

  • Lay all veggies on pan and drizzle with avocado oil and sprinkle with s&p and rosemary

  • Roast for 25 minutes
