Crunchy Kale With Roasted Asparagus & Wild Caught Flounder

One Pan Meal

One pan meal in less than 30 minutes

Needing a quick and refreshing dinner in less than 30 minutes?

One of my favorite ways to make kale this summer season is by oven roasting it! This gives your greens a fun texture that goes nicely with fish. Pick up some farm fresh kale and asparagus and meet me in the kitchen.


Step by step

Ingredients:

  • wild caught flounder (mine is frozen from Costco)

  • farm fresh kale (or bought organically from your local grocery store)

  • farm fresh asparagus (or bought organically from your local grocery store)

  • 2 tbsp olive oil

  • sea salt and black pepper to taste

  • 1 tbsp lemon garlic and herb seasoning

  • 1/2 lemon

Method:

  • Preheat the oven to 375 F

  • Line medium sized baking sheet with parchment paper

  • Add 1 handful of chopped kale and drizzle with olive oil and sprinkle with sea salt & black pepper

  • Add fresh asparagus on the side and drizzle with little olive oil and sprinkle with sea salt

  • Add fish that is no longer frozen on top of kale and drizzle olive oil on the fish and coat with lemon garlic and herb seasoning

  • Squeeze everything with fresh lemon

  • Oven roast for 20 minutes and enjoy
