Vegan Dark Chocolate Chip Cookies
These cookies may be by far be the BEST chocolate chip cookies I have ever made and they are gluten free, dairy free, refined sugar free, and vegan friendly! Sounds honestly too good to be true but it is all true. The texture and taste is perfect. You and your family will love these!
Ingredients:
1/4 c coconut sugar (brown sugar)
1/2 c olive oil or melted coconut oil
1 tbsp pure vanilla
1/2 c + 1 tbsp maple syrup
2 tbsp almond butter
Add 1 can of aquafaba (chick pea juice)
2 c all purpose GF flour (Trader Joe’s or Bob Red Mill’s
Tea spoon of cinnamon
Pinch of sea salt
1/2 tsp baking soda
1/2 tsp baking powder
Chocolate chips (72% dark chocolate DF and GF)
Method:
Whisk coconut sugar, vanilla, maple syrup, and oil in large glass bowl
Add aquafaba to separate bowl and froth until fluffy then add to liquid mix
In large glass bowl, add flour, cinnamon, salt, baking soda, and baking powder and stir with wooden spoon
Add dry ingredients to wet ingredients
Add dark chocolate chips (batter will be runny and sticky)
Freeze for 30 mins or refrigerate for hour until thick
Bake on 350 for 15 mins
Allow to cool then enjoy
