Autumn Harvest Chili

This chili might be my favorite yet! Made with sweet potatoes, red bell pepper, and kale, it makes for a great fiber rich meal perfect for campfire season!


Ingredients:

  • 1 package of ground turkey pasture raised and antibiotic / hormone free

  • 3 cans organic black beans

  • 3 cans organic kidney beans

  • 2 medium sweet potatoes

  • 1 large organic red bell pepper

  • 3 cloves minced garlic

  • 1 chopped medium sweet onion

  • 4 c water

  • 1/2 bag shredded kale

  • 4 tbsp chili powder

  • 4 tbsp cumin

  • 4 tbsp paprika

  • 1 tbsp cinnamon

  • 1 tsp cayenne pepper

  • 1 tbsp garlic powder

  • 2 tsp sea salt

  • Add additional chili powder, sea salt, and cumin as needed

Method: 

  • In iron skillet, add 1 tbsp avo oil and ground turkey meat

  • Sprinkle 1 tbsp cumin, paprika, cayenne pepper, garlic powder and sprinkle sea salt

  • cook thoroughly

  • While meet is cooking, add 2 tbsp olive oil to crockpot, minced garlic, chopped onion, and bell pepper (you cant taste the garlic and onion) — toss then add sweet cubed sweet potato or zucchini if you prefer

  • Add remaining seasonings

  • Add beans after they have been rinsed and drained

  • Add water (may add additional water after all ingredients are in)

  • Add 1/2 bag of kale and ground turkey

  • Stir and cover with lid

  • Place on high heat and allow it to slow cook all day or place on low and allow it to slow cook all night and it will be ready that following afternoon

  • Serve with 1 tbsp greek yogurt, cassava flour tortilla chips, and your favorite hot sauce

  • Be sure to taste test and add additional seasoning until you find the perfect taste for you (I added extra cinnamon and chills powder)
