Blueberry Peach Oatmeal Cobbler
When the fruit gets just ripe
During the summer months, I love to enjoy fresh fruit, but when your peaches start to “go bad” or bananas start to become super brown, that is the perfect time to roll up your sleeves and get creative in the kitchen. This recipe is super simplistic and super delicious, and I cannot wait for you to try it!

The step by step
Ingredients:
4 overly ripes banans
6 overly ripe peaches
3 c rolled oats
1 c frozen blueberries
3 tsp cinnamon
1/2 tsp nutmeg
1/2 lemon
1 tbsp coconut oil
3 scoops So Delicious vanilla oat milk ice cream (optional)
1 tbsp pure maple syrup
Method:
Preheat the oven to 350 F.
In large glass mixing bowl, add the 4 ripe bananas and mash with fork until creamy consistency forms.
Then add 2 tsp cinnamon and stir.
Then add blueberries, stir, then set aside.
Take medium sized iron skillet to the stove and set to warm. Then add coconut oil until melted with skillet nicely coated.
While your coconut oil is melting, slice your peaches into cubes (if bruised— it’s okay! Makes for a great cobbler).
Add peaches to the iron skillet and add remaining cinnamon and nutmeg. Toss then squeeze 1/2 lemon, then toss again.
Once edges become bubbly ~ 5 mins, add oat mix and turn off heat.
Pat it down then toss it into the oven for 12 minutes.
Top with ice cream and maple syrup and enjoy while it is hot!
