Coconut Green Curry With Cauliflower Rice
Now that it’s getting chilly
One of my favorite meals to make when the weather starts cooling off is curry based dishes. Tonights was super simple and detox approved. Filled with fiber rich veggies, healthy fats, and vibrant greens enjoy this dish while you’re detoxing.

The step by step
Ingredients:
1/4 sweet onion chopped
3 cloves garlic minced
3 tbsp coconut oil
3 tbsp curry seasoning
1/2 tsp ginger
1/4 tsp sea salt
2 cans of coconut milk (I prefer Savoy, found at Asian markets)
2 1/2 tbsp green curry paste (add additional if you want it spicier)
1/2 bag broccoli slaw
3 handfuls spinach
2 chopped zucchini
1/2 c chopped broccoli
Method:
In dutch oven on medium heat, add coconut oil, garlic, and onion. Toss until slightly brown.
Add curry seasoning, ginger, and sea salt. Toss again.
Add zucchini, broccoli slaw, and broccoli and toss.
Add coconut milk, curry paste, and spinach. Stir and reduce heat to medium.
Add lid to dutch oven and allow it to simmer for ~20 min and serve over cauliflower rice
