Lemon Basil Salmon with Steamed Veggies

Less than 30 minutes

The perfect summer recipe

A dinner that takes less than thirty minutes to make and all in one dish is my kind of meal. Adding fresh basil and lemon to this recipe not only brings out the perfect flavors of summer but keep it light and fresh. With the veggies and the fish folded into aluminum foil, this meal can be easily steamed on the grill for more of the charred flavor or roasted in the oven for a more smooth flavor. Either way, I cant’t wait for you to try!

Step by step

Ingredients:

  • Wild caught salmon fillet

  • 1 lemon

  • 1 yellow summer squash

  • 1 clove garlic

  • 1 c halved orange baby tomatoes

  • 2 tbsp olive oil

  • sea salt + black pepper

  • 1/4 c fresh basil

Method:

  • Preheat oven to 375 F

  • In large piece of aluminum foil, place salmon in center with 1 clove minced garlic, 1 tbsp olive oil, 1/2 lemon and pinch of sea salt on top

  • Place three pieces of lemon circles on top and scatter the halved tomatoes around the fish

  • Cut squash into spears and place in large mixing bowl

  • Toss squash in 1 tbsp olive oil, 1/2 lemon, 1 clove minced garlic, fresh basil and s & p

  • Add squash to salmon and fold the alumni foil up into a pouch

  • Place the aluminum foiled pouch on the grill or in the oven for 15-20 minutes

  • Serve over a bed of fresh greens and enjoy
